One of my favourite summer moments is when you walk past a beach or house, and inhale the wonderful aroma of barbecue. This dish is delicious oven baked, but having given it a go on the barbecue, I can seriously vouch for just how amazing it tastes! I made it with fresh snapper, but any firm white fish will work perfectly.

Baked Masala Fish

Ready in 1 hour. Serves 4-6.


  • 1 whole fish, deboned and scored
  • 1 teaspoon chilli powder
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1-2 cloves garlic, crushed
  • 1/3 cup olive oil
  • A good squeeze of lemon juice
  • 1 tablespoon tomato passata


Mix everything together and spread over the fish.

Marinate in the fridge for 30 minutes.

Preheat oven to 180°C. Place the fish on an oven tray, cover with a large piece of foil and bake for 20-25 minutes or until fish is opaque.

Take off the foil to allow the fish to crisp. Brown for a further 5-10 minutes.

Remove from the oven. Serve with lemon wedges and homemade chips. Perfect!
